Ingredients:
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 8 tablespoons (1 stick) unsalted butter, softened
- 3/4 cup creamy Biscoff
- 1 cup firmly packed brown sugar (I used light brown sugar)
- 1 large egg, at room temperature
- 1 teaspoon vanilla extract
- Preheat oven to 350°F. Line cookie sheets with silicone liners or parchment paper.
- Mix together the dry ingredients in a medium bowl.
- In a large bowl, cream together the butter, Biscoff and brown sugar. Add the egg and vanilla.
- Slowly add the flour until smooth.
- Roll the dough into walnut sized balls and roll in a bowl of sugar. Lightly press balls.
- Bake for 10 minutes. Cool the cookies on a wax paper.
