Cookie Ingredients
- 3/4 cup butter, softened
- 2 oz cream cheese, softened
- 1 1/4 cup light brown sugar
- 2 eggs
- 2 tsp pure vanilla
- 1 tsp baking soda
- 1/2 tsp salt
- 2 1/4 cups flour
- 1 cup white chocolate chips
- 3/4 cup - 1 cup chopped dried cranberries
Frosting Ingredients
Cookie Topping
- 6 oz cream cheese, softened
- 1/4 cup butter, softened
- 1 1/2 cups powdered sugar
- 1/2 cup white chocolate chips, melted
- 1/2 cup coarsely chopped dried cranberries
- 1/2 cup white chocolate chips, melted
Preheat oven to 375 degrees F
- In a separate bowl, whisk together flour, baking soda and salt until well-blended. Set aside.
- Using an electric mixer on medium-high speed, beat the butter, cream cheese and sugars together until fluffy, about 2 minutes.
- Add eggs and vanilla. Then slowly add in the dry ingredients. Mic until well-combined.
- Fold in the white chocolate chips and cranberries, and mix until just-combined.
- Refrigerate dough for 1.5-2 hours. Then place dough by rounded tablespoon-fulls onto a baking sheet that has been lined with a silicone liner or parchment paper. Bake for 10-12 minutes, or until the cookies are lightly golden around the edges.
- Beat cream cheese and butter together until smooth. Mix in powdered sugar and beat until creamy. Mix in melted white chocolate.
- Spread frosting on top of cookies.
- Sprinkle the frosted cookies with the chopped dried cranberries.
- Use a fork to drizzle on the the melted chocolate
