Apple Muffins #recipe

I posted this a couple years ago, but with us recently picking apples, figured it was a good time to re-share! I did tweak the original recipe a little bit as you will see below.   I also increased the bake time and doubled the recipe when I made mine

Apple Muffins
Adapted from The Girl Who Ate Everything

Ingredients 
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 cup oil
  • 1 Tablespoon vanilla
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 3 cups peeled, cored, diced apples (around 3 small apples)
  • 1/4 cup. brown sugar mixed with 2 Tablespoons cinnamon (reserve for topping)


Instructions
  • Preheat oven to 350 F.
  • In a large bowl cream together the sugar and eggs. Add the oil and vanilla. In separate bowl mix all the dry ingredients.
  • Add dry ingredients to creamed mixture. The batter will be very thick. Add the diced apples.
Fill muffin tin with liners tins and fill liners to the top. Sprinkle with brown sugar, about 1/2 tsp. brown sugar per muffin.

Bake for 25-30 minutes. Makes 20-24 muffins.

  1. Thank you for sharing your Apple Muffin recipe. My husband was recently asking me to bake him something with the apples he brought home, so it's quite awesome that I stumble on this recipe! I'm going to make these over the weekend and hope they come out as good as yours look :)
