I posted this a couple years ago, but with us recently picking apples, figured it was a good time to re-share! I did tweak
the original recipe a little bit as you will see below. I also
increased the bake time and doubled the recipe when I made mine
Apple Muffins
Bake for 25-30 minutes. Makes 20-24 muffins.
Apple Muffins
- 1 1/2 cups sugar
- 2 eggs
- 1 cup oil
- 1 Tablespoon vanilla
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 3 cups peeled, cored, diced apples (around 3 small apples)
- 1/4 cup. brown sugar mixed with 2 Tablespoons cinnamon (reserve for topping)
Instructions
- Preheat oven to 350 F.
- In a large bowl cream together the sugar and eggs. Add the oil and vanilla. In separate bowl mix all the dry ingredients.
- Add dry ingredients to creamed mixture. The batter will be very thick. Add the diced apples.
Bake for 25-30 minutes. Makes 20-24 muffins.

Thank you for sharing your Apple Muffin recipe. My husband was recently asking me to bake him something with the apples he brought home, so it's quite awesome that I stumble on this recipe! I'm going to make these over the weekend and hope they come out as good as yours look :)
