- 1 (18 ounce) box strawberry cake mix
- 3 eggs
- 1/4 cup cooking/vegetable oil (not olive oil)
- 1/4 cup water
- 1 cup carbonated lemon-lime beverage (I used one small can of Sierra Mist - 7.5oz)
fresh sliced strawberries, sliced
Cool Whip Topping, thawed or 1 can of white frosting
- Preheat oven to 350 degrees.
- Line 2 cupcake pans (recipe made 24 cupcakes)
- Mix the five ingredients in a bowl; beat well until smooth (about 3 minutes). The kids will enjoy watching the cake mix fizz when the soda is added!
- Transfer the batter to a lined cupcake pan
- Bake for 14-18 minutes, or until cake test done
- Once cooled frost with either Cool Whip or a can of White frosting.
- Top with a sliced strawberries and cool in fridge until ready to serve
