Pepperoni Pizza Puffs
adapted from Everyday with Rachael Ray
Ingredients:
- 3/4 cup flour
- 1/4 teaspoon garlic powder (optional)
- 3/4 teaspoon baking powder
- 1 tablespoon Italian seasoning
- 3/4 cup whole milk
- 1 egg, lightly beaten
- 1 cup shredded mozzarella cheese (reserve a small amount)
- 1/4 cup grated Parmesan cheese
- 1 cup cubed/sliced pepperoni (you can use ham if you prefer it over pepperoni)
- 1 jar of pizza sauce
- Preheat the oven to 375 degrees. Spray either a 6 cup muffin tin or a 24-cup mini-muffin pan. I used a 6 cup muffin tin for this recipe.
- Cut/slice pepperoni. I used kitchen shears and cut prepackaged pepperoni into fours.
- In a large bowl, mix together the flour, baking powder, Italian seasoning, and garlic powder .
- Mix in the milk and egg. Stir in the mozzarella, Parmesan and pepperoni
- Let mixture stand for 10 minutes or longer
- Divide mixture among the muffin tin or mini-muffin cups.
- Bake until puffed and golden, 20 to 25 minutes. At the 15-20 minute mark, I pulled out the muffins and sprinkled remaining mozzarella on top and then finished baking.
Not only are these yummy but under $10 a meal! I had everything in the house but the pepperoni! With coupon the pepperoni was $1.50. So for me to make this meal it was less than $2 since the only thing I had to buy specifically was the pepperoni!
