Pepperoni Pizza Puffs Recipe



Pepperoni Pizza Puffs

Ingredients:
  • 3/4 cup flour
  • 1/4 teaspoon garlic powder (optional)
  • 3/4 teaspoon baking powder
  • 1 tablespoon Italian seasoning
  • 3/4 cup whole milk
  • 1 egg, lightly beaten
  • 1 cup shredded mozzarella cheese (reserve a small amount)
  • 1/4 cup grated Parmesan cheese
  • 1 cup cubed/sliced pepperoni (you can use ham if you prefer it over pepperoni)
  • 1 jar of pizza sauce
    Instructions:
    1. Preheat the oven to 375 degrees. Spray either a 6 cup muffin tin or a 24-cup mini-muffin pan.  I used a 6 cup muffin tin for this recipe.
    2. Cut/slice pepperoni.  I used kitchen shears and cut prepackaged pepperoni into fours.
    3. In a large bowl, mix together the flour, baking powder, Italian seasoning, and garlic powder .  
    4. Mix in the milk and egg. Stir in the mozzarella, Parmesan and pepperoni
    5. Let mixture stand for 10 minutes or longer
    6. Divide mixture among the  muffin tin or mini-muffin cups. 
    7. Bake until puffed and golden, 20 to 25 minutes.   At the 15-20 minute mark, I pulled out the muffins and sprinkled remaining mozzarella on top and then finished baking.
     
    Serve the puffs with the pizza sauce for dipping.   These are perfect for a meal (we are serving with a salad tonight) or as a nice appetizer!

    Not only are these yummy but under $10 a meal!  I had everything in the house but the pepperoni!   With coupon the pepperoni was $1.50.   So for me to make this meal it was less than $2 since the only thing I had to buy specifically was the pepperoni!
